members' recipes
We often get requests for members' recipes at our Monthly Cafe so we will try to put together a selection.
CHOCOLATE MICROWAVE CAKE
(You need a microwaveable 18cm ( 7" ) container. I use a straight sided soufflé dish with a cake tin liner.
Ingredients:
175g (6oz) soft margarine
175 (6oz) caster sugar
40g (1.5oz) cocoa powder
150g (self raising flour) FOR A GLUTEN FREE CAKE I USE DOVES GF SELF RAISING FLOUR & GF BAKING POWDER)
1 teaspoon baking powder
2 drops vanilla essence
3 tablespoons milk
3 eggs
METHOD. Place all ingredients in a large bowl. Beat well until mixture is smooth. Spoon into container. Place in microwave on an upturned plate.
600w oven cook for 10 minutes 30 seconds
700w oven cook for 8.5 minutes
Leave cake to stand for 5 minutes before turning out. Cool before sifting icing sugar over top or decorate with butter icing. ENJOY!
